Pan-Roasted Pioppinos

4 cups mushrooms, sliced (This recipe works for a large variety of mushrooms but we've enjoyed oyster and pioppino with this recipe. Quantity can be adjusted as desired.)
3 tbsp olive oil
2 tbsp water
3 tbsp vegan butter
2 tbsp shallots, minced
1 tbsp thyme
2 garlic cloves, minced
Salt and fresh cracked Black Pepper

Heat a large cast iron pan over medium-high and add olive oil.
Add sliced mushrooms and water. Try not to stir and cook for 8-10 minutes. The mushrooms should be nice and brown.
Add garlic and saute for 1-2 minutes.
Remove the pan from the heat and add the remaining spices and vegan butter.
Stir to combine, season with salt and pepper to taste then serve.
